The goose was sensitive, wet, and very tasty. It was combined with new steamed greens that were cooked just right, and wild rice that covered dried cranberries and nuts.
The quail was, according to my husband, cooked to perfection. H-e really liked it. It was accompanied by the same wild rice as the duck and a crepe filled with a cranberry sauce, which he thought was de-licious too.
